Fancy Finnish Shortbread Cookies

These Fancy Finnish Shortbread Cookies, are a classic dough made festive with a little bedazzling from edible glitter.

Ingredients

  • 2 cups unsalted butter, room temperature

  • 1 cup granulated sugar

  • 4 cups all-purpose flour, sifted

  • 1/8 teaspoon kosher salt

  • edible glitter for rolling

Directions

  • Preheat the oven to 350 degrees. Line 2 cookie sheets with parchment paper.
  • Place the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Cream together on medium speed for 3-5 minutes until light and fluffy and the sugar has dissolved.
  • Sift the flour into the butter mixture, add the salt and mix on low speed for about a minute until the dough starts to come together and becomes shaggy. Turn out onto the counter, divide into 4 portions and roll each into a 1-inch logs or squares. Wrap each log in parchment paper and freeze for 15 minutes.
  • Remove the logs from the freezer, and roll each log in glitter, coating the sides well. Cut the logs into 1/3 inch rounds and place 1/2 inch apart on the cookie sheets. Bake for 8 minutes rotating the sheets halfway. They should be puffy on top but not browning. Let cool on a cooling rack and enjoy.
